1- used for
Engine Oils
Gear Oils
Final Drive Oils
Brake Fluids
Suspension Fluid
ATF's " Automatic transmission fluid"
MTF's  " Manual transmission fluid '

2- By Usage
Coolant
Antifreeze
Hydraulic
Cleaners
Grease
Degreasers
Additives

3- By composition
Fully Synthetic oil : is oil consisting of chemical compounds which were not originally present in crude oil (petroleum), but were artificially made (synthesized) from other compounds.

Semi Synthetic oil : (also called 'synthetic blends') are blends of mineral oil with less than 30% synthetic oil. Designed to have many of the benefits of synthetic oil without matching the cost of pure synthetic oil.

Mineral oil : or liquid petroleum is a by-product in the distillation of petroleum to produce gasoline and other petroleum based products from crude oil. It is a transparent, colorless oil

the next table will explain some Characteristics of each type

Fully Synthetic
Characteristics
0W-30
0W-40
5W-40
Fuel economy savings
Enhances engine performance and power
Ensures engine is protected from wear and deposit build-up
Ensures good cold starting and quick circulation in freezing temperatures
Gets to moving parts of the engine quickly
Semi-synthetic
Characteristics
5W-30
10W-40
15W-40
Better protection
Good protection within the first 10 minutes after starting out
Roughly three times better at reducing engine wear
Increased oil change intervals - don't need to change it quite so often
Mineral
Characteristics
10W-40
15W-40
Basic protection for a variety of engines
Oil needs to be changed more often

4- By Grade

Mono grade : definition of oil specification where the kinematic viscosity is measured at a reference temperature of 100°C.

Multi-grade : definition of oil specification to measure the kinematic viscosity where The temperature range that the oil is exposed to in most vehicles can be wide, ranging from cold ambient temperatures in the winter before the vehicle is started up to hot operating temperatures when the vehicle is fully warmed up in hot summer weather.

5- By company recommendation
Some companies are producing Engine , and Gearbox Oils. As a company designed the engine its also design the sutiable Oil Grade, and it may recomend one of the oil company productions like Mobile, Silkolene, Castrol, valvoline  or Motul. compaines are designening oils to cover the engine needs in deffrent weather and difrent working inviroments  .
BMW, mercedes, Volvo, General Motors, Ford , and others some times recommends oil grade or oil type and some time recommend a specific oil company.
